Rose Veal is beef under 13 months of age. They are typically processed at 9-12 months. Most are VAX FREE. Veal is paler in color, a lighter pink vs the rich red of regular beef. It is also quite tender, and can be a little leaner in the marbling and external milk fat depending on the animal. Rose Veal are raised with their mother, but for what reason, often due to temperament, are not safe to keep on the farm to grow out as a grown animal. They are harvested younger, which yields the equivalent of lamb, pork, young chicken, or a “fat fawn deer”. Which is a superior in tenderness meat. Another benefit is the smaller cut size. Steaks that are often 2 pounds on a grown beef, are about 1 pound on a rose veal.

Veal is NOT “baby”. No, Nope, NOT. The Rose Veal is about 12 months younger than our regular grass finished beef. Rose veal is 100% grassfed. Every animal we raise grows through this stage. Only a select few are harvested at this stage.
